Yeah. Like, given the aspects mentioned (if they're accurate and not overstated; I haven't read that far into ASOIAF), if "monotheism!" was prominent there, I'd say they have a stronger case. Older monotheistic religion supplanted by church-y new religion and being ethnocentric and whatnot, yeah, that's closer.

I think the only monotheistic religion in GoT is R'hllor, which is a newer, more obscure (and very violent) religion. But in general, the situation is that the Old Gods (animistic religion) has been mostly supplanted by Faith of the Seven except for in the North. Both religions are polytheistic.

There's more to Judaism than monotheism. You can pick a different attribute to be the cornerstone of your fantasy universe Jewspired religion and still get a point across. Not saying the ASOIAF headcanon's got legs, just saying it can be done.

Well yeah, but when it comes to the historical context of what made Judaism stand out from other religions, monotheism was a big part of that. So if you're going to argue that the Starks were coded Jewish and specifically cite their religion as one of your supports, the fact that the Old Gods were plural and not singular really weakens your argument.
