I think that the creators were asked about it, and it wasn't intentional? I've done some internet searching in the past and haven't found any admissions that he "is" Jewish, though it'd be kind of cool if some Word of God turned up.

I *am* however supplied with.... somewhat of a Word of God regarding Levi, because I talked to some of the shows animators and was like HE'S JEWISH RIGHT and they said LOL MAYBE so that counts I guess :D :D :D

With the way Isayama loves his WWI/WWII imagery, I think it's possible for the Ackerman clan to be coded as Jewish.

Omg, don't get me started on Isayama and WWII imagery... there's some really uncomfortable stuff in there in terms of the way he's presenting the story. Like I hate to jump out and shout that he's a Japanese nationalist, but... it kind of looks like it :X

I mean the references are so messy there that I'm not sure how to read the Ackermans at this point, because the plot isn't actually making much sense atm anyway. And we haven't heard anything about the Ackermans in a while...
But like you say, it could be! Like, at least the Jews get to be cool, I guess...?
