I think that you're overly attached to the Alan Rickman portrayal - book!Snape has control almost only when acting in his capacity as a spy. Most of the time he acts like the petty teenager he never stopped being. No one with total self-control would actively bully children of 11 years old. I like that he sounds like the whiny bitch he is.

I agree about the Harry lines though. Some of my favorite lines that I always imagined as off-the-cuff sarcastic are being way overplayed. I blame the director/editing team more than the actor. They're the ones choosing which take to use. I'm sure there are different line deliveries they recorded.
