Not discovering that her mom was a horrible person, not because she grew at all. Because she had a memory. And then afterwards, she completely discards all feelings about the woman who raised her. I don't think Gothel *deserved* pity, but it's far more realistic that she would have some.
Flynn and Rapunzel barely interact, I feel. It's that they do things AROUND each other, not exactly with. I didn't feel like there was much of a connection with them.
Gothel was disappointing. She didn't have much menace and I would have preferred to see some moments of just her thinking and scheming to establish her as a better villain.
Not to mention Flynn is kind of a bad guy. Not just because he steals the tiara--remember, he leaves his cohorts to get hanged. For no reason but to save his skin. At this point they're no better or worse, and even though the Stabbington brothers are portrayed as villains, I don't think they're actually close to being as bad as we think. Even if they wanted to kill Flynn, he kind of deserved it. And they might have tried kidnapping Rapunzel, but it was actually to ransom her back to her own parents...that's not even that bad, really.
And then there's other stuff, like the songs being boring, the design being uninspired, and Rapunzel herself looking really bizarre with a huge head, an extremely tiny body, and grapefruit-sized eyes with extremely puffy lips.

Gothel mentally and emotionally manipulated Rapunzel for years. Isolating her with fear and destroying her self esteem at every turn so Rapunzel, her immortality, wouldn't leave.
Pause and consider that Gothel knew exactly what she was doing every moment of every day. She terrorized and frightened a child so she wouldn't leave. Let me say that again. She frightened a little girl so much, she was afraid to go outside. The menacing thing about Gothel, is that she exists irl.
Plus at the end Gothel threatens to lock her up again. Then she stabs Flynn on top if it.
You say Rapunzel throws away her feelings for her 'mom'. That's like saying a kidnapping victim, with Stockholm Syndrome, throws away their 'feelings' for their kidnapper.
Oh wait, it is.
Obviously we got very different messages from this movie.
