I feel like you and I are playing different games, OP. Also: I don't agree with your assessment that SE makes you care and then takes characters away.

In terms of Aymeric (not sure if this is relevant, but thought I'd mention it)-- there are role quests that fill in a LOT of gaps and definitely give you more development in other places with older characters.
Why buy Endwalker if you're going to skip all the cutscenes? Endwalker literally ties the entire arc together. Skipping the cutscenes makes no sense and will definitely give you less of what you want. But maybe you're just burnt out? It's ok to play other games.
