Sorry, was asleep.
So this is basically how I do it to only use one big pan: first, I roast the pine nuts and put them aside (they are not entirely necessary though, just give a bit of additional depth). Then I heat up some toasted sesame oil - maybe half a cup (I always do a bigger amount so I have some for the next time I use it, it keeps well in the fridge for a few weeks) and when hot, pour it over a mix of dried chilli flakes, chill powder and a bit of salt (it bubbles a bit, I always use a slightly bigger cup for this). Also put it aside.
Then I put some vegetable oil in the pan, add some veggie bouillon powder and toast some cut up stale bread into croutons (though I'm sure store bought croutons work well too).
Next, I fry the chicken. I usually use frozen chicken tenders that I cut up in smaller pieces after frying. Take it out as well.
I usually use frozen spinach so I either let it thaw beforehand. Fresh works just as well. Put it in the pan and heat it up, add one or two cans of drained chickpeas, then add some of the sesame oil. Then add the sour cream (enough that it generally gets a bit creamy but not too much). Then the chicken and pine nuts. I usually add some of the croutons into the pan to let them soak up some of the juices and keep the rest to sprinkle them on top for the crunch. Season with more sesame oil, salt and pepper to taste. (The croutons add quite a bit of salt so I usually add salt while eating if needed.)

That's basically it. I don't really have exact measurements because this was an old recipe that I changed quite a bit (the original had fresh chillies instead of chili infused sesame oil, turkey breast instead of chicken and the bread was just cut up white bread, not savoury croutons).
