I'll be honest, I sort of agree with you but sort of not. I don't have any problem with changing a character's sexuality in fiction - it's like genderbending, species-swapping, AU-ing, or any number of other things where writers can use their imagination and have fun. Pointing out that it's OOC is kind of dumb - people probably already know that.

I only have a problem with it if people start to claim that it fits with canon, because...no.

BUT - and this is a big but - very few characters (at least that I've seen) have explicitly defined their sexuality (or had it defined by his/her creator). And unless a character comes out and says "I am straight/gay/bi/whatever" it's not really OOC to assume that any are plausible.
