I'm guessing you're talking about Samurai Flamwenco, but I can't think of anything else recent that had queer baiting as usually go for otaku dreck instead.

It's not a trend, it's only Samurai Flamenco. Depending on how you read the ending, maybe Kill la Kill, although many shippers were disappointed by their pairing turning out to be sisters.
