People generally produces patronuses of animals seen in their native country, but that is not a certainty.

People have been known to conjure Patronuses of Mammoths and Giants, but examples of this size are rare.

Most patronuses are common animals. Dogs, cats and horses are among the most common examples, with magical creatures being amongst the rarest. The inbetween covers things like foxes, otters, deer, etc. Prehistoric animals, as mentioned above with the mammoth, are possible also, but very uncommon. They are heavily based on the individual, so it's more than possible for twins to produce very different patronuses.

Owls are surprisingly uncommon, considering their closeness with wizardkind.

Larger patronuses do not appear to take more energy to conjure, nor are they necessarily more powerful. An example given is that a lowly mouse Patronus was capable of holding off an army of dementors single handedly.

You can find detailed information on Patronuses on Chapter 12, Book 3 on Pottermore. It answers many of your questions ... but not as to whether aquatic ones are possible, which I hope, 'cos I'd want mine to be an octopus. :c
