FYI - Tolkien and Middle-Earth:

Creator-God - Eru Ilúvatar
All Angels: Ainur
Demi-gods/archangels: The Valar (upper level Ainur who entered the World)
Lesser Angels: Maiar (lower level Ainur who entered the World)
The Devil: Melkor/Morgoth (the most powerful Ainu, who went bad due to pride)
Lesser Devil: Sauron (Maia who joined Morgoth's side)

The Silmarillion has a whole creation story at the start.

I expect Elves to swear by Ilúvatar or any of the Valar (though with a fondness for Elbereth), Dwarves to swear by Mahal (Aulë, the Smith of the Valar made them, though Ilúvatar gave them souls) and options are open for Men and Hobbits, remembering that places like the South (Harad) and East (Rhûn and beyond) probably worship Morgoth still.
