I can appreciate the need for simplicity. Unfortunately Cindy's hairstyle didn't cover up the shortcut in the long run as well as Snow White's and Aurora's. One could also argue that if she'd had ears in her original design in the first place, they wouldn't have needed 'additional' material. I also wonder if ears weren't considered particularly princessy anatomy back then. The princes got ears and so did Cinderella's stepfamily. It was a different time, though, like you say, not just in terms of technology but what people expected out of their animation. Hyperrealism's a fairly modern trend.

But she clearly has ears for the most part of the movie - in her work clothes and when her hair isn't up, you can see them - simplified but still clearly present. The ballgown is the only point where you can't see them because they're hidden by hair and headband and she only wears that for, what 10, 15 minutes of the whole movie?
