I think of Let's Plays personally as any format where you can visually "follow along" through a whole play-through and there's explanation/commentary throughout in any format. lparchive has LP's ranging from simple key screenshots interspersed with text paragraphs to full video with dual narrators. (I tend to like either the screenshots with occasional links to cutscenes or videos with text superimposed, and can only think of one talking LP I've really liked offhand.)
