The Snowman. David Bowie in the opening also helps kick it off. That music throughout always gives me frisson.

Superjail is one of those cartoons that look like it was animation heaven to be animated with so much love. It's about a weirdo prison run by a weirdo warden, people die a lot, but that's okay because things mostly reset by the next.

Favorite animated stuff, uhhhh, here's a list of animated movies I think are worth checking out

A Monster in Paris-Music is really catchy and it's something different, animation isn't that bad either!

Paranorman-I adore how raw the dialog is in this movie. Stopmotion is always a plus

Hotel Transylvania-I love that the love story actually has the characters bonding over shared dreams and not 'omg u so hawt bb'

Rango-This movie is darker than I thought it'd be, in a good way. The animation is really nice and gritty and fits the tone

if movies count, The Lion King. but it feels weird to lump that in with TV cartoons. They feel like really different genres to me.

Toooo many! But this CalArts short (There's a Man in the Woods) that's been making the rounds is pretty awesome (only quibble is that the narrator sounds young for the character, but nice delivery):

Futurama! It's also the show that's made me cry the most. I can watch this show over and over again.

The Last Unicorn.

I found it in the video hire store right after my family first got a VCR in 1986. That movie gave me my huge fondness for unicorns in genereal and unicorns who get turned human in particular (I had an OC who went through that, she never turned back, but she did have awesome adventures even as a human).

I'd read the book if you haven't yet, it's much better than the movie-and the movie was written by the author!

Oh I have read the book! I personally found that, on reading the book, that the movie got it pretty good. Maybe some of the finer details got left out, but for the most part the spirit of the story stayed.
