I think it's best in the middle. In the beginning, you don't have a lot of power, and since you're allowed to proceed in a lot of different directions, you can easily walk into situations you're not prepared for. In the end, the difficulty curve gets a little too steep, and you fight a couple bosses who're annoyingly overpowered. Still, it never gets completely unfair, and because the game's so open-ended, if you're stuck on one boss you can usually try others and level up a bit.

(Okay, maybe those two archers in Anor Londo on that dangerously tiny catwalk are unfair.)

P.S. There is one warning that the game does not emphasize enough, and it's one that can really affect your enjoyment. Fights with big, slow bosses get SO MUCH EASIER if you never carry more than 25% of your maximum carrying capacity, so you're not encumbered and can more easily dodge out of the way of their attacks. (The handiest ring in the entire game is the one that lets you wear heavier armor without being slowed down.)

Yeah, that's the impression I got from playthroughs, that you gotta be careful what you wander into and that too much weight really screws you up in a game where quick dodging isn't remotely optional. I usually like to take the direct approach in a game and let tough armor protect me, but I'd be hopping around like a jackrabbit in my skivvies in Dark Souls until I could get the proper armor.
