Coming from the west I found people in the south horrifically rude at first. Southerners use ma'am/sir and endearments a lot, and it's standard form down here to ask people how they are, where they're from, etc. even if you've never met before, and to make small-talk with waiters/cashiers/random people.

I've had the same experience in reverse in non-southern places. Cashiers/waiters/whatever will just say yes and no and not really want to make any conversation. People just aren't friendly, and yeah, it sometimes seems rude. It's interesting that people from elsewhere find us rude. I guess it all just depends on how you grew up/what you're used to, though.

Hamburger toppings in the south are weird. Down here it's mustard OR mayo, never both, ketchup isn't even included much of the time. In Nevada it's mayo+ketchup+mustard.

That must vary depending on the exact location because here everyone has ketchup on hamburgers. Mustard/mayo is usually an either/or but it does include ketchup...either ketchup/mustard or ketchup/mayo. Generally not all three though.
