I love to cook and enjoy tackling recipes of all difficulty levels. My favorite easy dish involves taking Emeril Lagasse's Frog Legs Sauce Piquante recipe (http://www.foodnetwork.com/recipes/emeril-lagasse/frog-legs-sauce-piquante-recipe.html) and substituting tofu for the frog legs. You can substitute chicken or rabbit as well. If you use tofu, I recommend cooking it separately for a bit first (grill, bake, fry, whatever you'd like) to ensure the tofu keeps its shape. Extra firm tofu will work best for this. :)
