crafting the plot of a story. there's always something missing: the beginning, the end, or a mountain sized portion between the two.

Three-act/part structure works as a good crutch in a pinch.

1. There's a problem.
2. The problem gets worse.
3. Resolve the problem (not necessarily happily.)

Ugh, middles are awful. You have my sympathy.

Maybe try to break things down into, "I need a scene or chapter that establishes X (where X is a plot point/character relationship/character trait that will change during the course of the story/apparently-insignificant detail that will be vitally important later/etc.) and then try to come up with interesting ways to accomplish each thing?

I've run into this problem, mostly in that either I can't figure out the story, or I meander and have way too much story. I've found this structure to be the best way to boil down the story and get it complete but also under control:

Hook: prologue, set-up for the story, whatever

Act 1/Beginning: rising action, introducing the story (characters and goals)

Turning Point 1/Conflict: obstacles to the goals (aka conflict)

Act 2/Middle: protagonists trying to contend with those obstacles in pursuit of the goal

Turning Point 2/"Action": antagonist/obstacle makes a striking blow against the goal

Turning Point 3/Climax: protagonists are able to overcome this striking blow

Act 3/Ending: The goal is in someway achieved/on its way to being acheived, and fall-out/loose-ends from rest of the story
