Apps
I know I want Twitter on the phone, which app do you use and do have reasons for choosing it?

Netflix, BuzzFeed, Play Music (it's google-based and let me easily get my entire iTunes library to my android phone), IMDB. I have YouTube, but I don't use it often.
Games
Temple Run, Angry Birds, Hot Donut (I downloaded this for my nieces, and it's surprisingly fun).
Communication/News
Twitter, Facebook, BBC (I'd happily take suggestions for free breaking-news based apps, particularly focused on the US).
Lifestyle
Myfitnesspal (food/exercise diary/calorie tracker), HabitRPG (make a list of things you want to accomplish on daily/weekly/whatever basis and you gain experience when you do them and level up or you take hit points when you miss them and eventually die and have to start back over), Houzz (interior design/decoration/room-planning)
Store-specific
Cartwheel (coupon app for Target), Dillons app (coupon/listmaker/points-tracker app for my brand of Kroger store)

Free: Evernote (for notes and such), My Data Manager (if you use data this can help you regulate it), if your bank has an app those are useful, Tiny Flashlight + LED, Zedge (for ringtones, wallpapers, etc)
Paid: Swiftkey. It takes it a while to learn how you type, but it is awesome. Also, it might actually be free now on the Play Store as Swiftkey keyboard.
Games:
Free: Compulsive, Robot Unicorn Attack 2, Temple Run 2, Tetris, Word Search
Paid: Plants vs Zombies (I don't like the sequel much but that one is free)

I'm trying to see how little I can use data, I'm at home or work most of the day with wifi, so I'm keeping data turned off for the most part.
I think once i get used to the phone a bit, I'll download tetris because I loved that game as a kid.

Any simple games you like that don't require being connected to the internet to play? I like tetris/bejeweled.

I don't have anything that fits your description, but Organ Trail is pretty simple? It's a parody of The Oregon Trail so if you dug that game and like zombies, you'll like it. The directors cut is a paid app, but I think there MIGHT be a free version.
I also love God of Blades (though that isn't anything like tetris and bejeweled, so idk if you would enjoy it; it's super addicting and fun, though short) but again, it's a paid app. Most the cell games I have are from humble bundles. (Which reminds me, Broken Sword is neat too.)
If you ever decide you want to play online (and if you like RPG's) you should try Pocket Legends. It's a free MMORPG. (I don't play it constantly, but I'll go through stages where I'm addicted to it for a week or two then drop it entirely, lol. It's fun, though.)

I have a feeling now that I'll be able to create ringtones, I may change more often. I used to have 4 ringtones, one for my close friends/family (The Office Theme song), my best friend (Crank That by Soulja Boy), Super Mario Bros for anyone in my contact list, and then a generic ringtone for anyone not in the contact list. This way I would know right away the speed at which I should pick up the phone. But once I'm able to create ringtones, the possibilities are endless!

I've also got the standard free Angry Birds games plus some utilities apps, like a period tracker(because I am so bad at tracking it myself).

I am really terrible with Instagram, I love it. I'm not even a selfie person really but I just kind of love snapping pictures of my pets or places/things that I think look nice and posting them because I can. I follow/retweet more than I post myself on twitter but I do like it.

I feel like I will be the same way and not take selfies but just post pictures of awesome places I go, foods I bake and random clothes I buy.

I use Current for news on my tablet [which I use more in general] since it actually gives you a lot more control over the news you want to see [generally by category] where as flipboard is just kind of whatever the people running it decide to put up there.
