If you mean sympathize as in pity, it may be because animals are seen as helpless. Also, a lot humans are assholes and everyone knows at least one asshole. Not so much with animals.

And I doubt most people in real life value animals over humans (I get sad when a dog dies in a movie but I don't value them more than actual humans).
