Snape is like my favourite character in Harry Potter, but I have no illusions about his character. If he got to raise Harry in anything other than a completely different AU of the HP World I'm pretty sure he would have been an emotionally abusive (if not physically) father and foster in Harry intense insecurities which probably would express themselves as cruel arrogance. You know, kind of like Snape himself.

If Snape as an adult couldn't bring himself not to mercilessly torture students he didn't like for fun (Not even just talking about Harry - what about Neville? And Hermione could have been the greatest potions student ever and have easily inherited his Half Blood Prince potions throne if he'd fostered her talent instead of putting her down at every opportunity), like hell he could have raised a child in an emotionally healthy environment.
