Re: Post stuff you've made!
Here is the recipe for the bottom layer of the cake, and the chocolate ganache that goes between the layers.
I used a half-recipe of this cake for the top layer, and swirled a few spoonfuls (maybe 6oz?) of raspberry preserves through the batter just before baking. The added liquid means it wants a few extra minutes in the oven.
This is the frosting recipe; I added a whole 10-oz jar of raspberry preserves, plus 1 1/2 tsp. of raspberry flavoring, and some food coloring, to the recipe. I still have some leftover frosting (it makes a lot!), but I'm not sure a half-recipe would've been enough. It gave me enough left to play with a bit of fancy piping, anyway.
So yeah. Flourless cake layer, spread with the preserves left over from the jar used to swirl through the DF cake, then pipe a layer of frosting around the edge of the cake to hold in the ganache. Pour the ganache in and tilt the cake around to spread it evenly, then settle the DF layer on top. Do a quick crumb-coat of frosting and let it hang out in the fridge for 20-30 minutes, and then frost and decorate. I thought using chocolate chips and fresh raspberries to decorate was a cute sort of way to hint at the flavors inside.
