I think it's the norm-breaking factor -- you expect a romantic couple to act a certain way, but when friends do it, it's unusual and unexpected and so much rarer that it's narratively more powerful, even for friendships I like both as platonic and as romantic. Stuff like...like Kirk and Spock's hand-holding moment in The Motion Picture. Like Starsky writing his name in lipstick on Hutch's hospital window. Like 75% of Mr. Carson and Mrs. Hughes' interactions. Like Natasha's "love is for children" comment.
And then there's friends where the more romantic they are, the more I love their friendship and yet the more adamantly I don't ship them. Like Jack and Liz getting accidentally married. Like Toby standing behind the window and thumping his hands over his heart for CJ to see while she's about to cry at the podium. Like every single thing about Turk and JD.
