If you're open to 80's/90's series, these are some my favorites:

Versailles no Bara
Slayers (including Next and Try)
Magic Knight Rayearth

I'd also rec Hokuto no Ken, Saint Seiya and 70's stuff like Devilman, but I watched those heavily dubbed and adaptated so I don't know if the originals would live up to my praise.

I'm more than open to them. Those are my decades of preference when it comes to anime. I've seen a bit of Slayers and really enjoyed it. Will have to pick it up and finish it.

Versaille no Bara is on my list of things to watch! Need to get around to it. It is apparently a classic. Considering that Yoroiden Samurai Troopers is one of my favorites, I'm pretty sure Saint Seiya will be right up my alley. Thanks!
