Touhou Project! It's a series of japanese "bullet hell" shooters made entirely by one man, ZUN. The gameplay is great, but it's perhaps even more famous for the music, which has a huge rearrangement culture (new games get released and groups race to be the first to arrange the new music, it's ridiculous). The characters and setting are all really vibrant and fun, too. The gameplay is quite understandably not for everyone but it has a lot of fans who just stick around for the lore.

Probably the best place to start if you want to learn more is the Touhou Wiki http://en.touhouwiki.net/wiki/Touhou_Wiki (It's a bit of an info-dump but I don't know of any good beginners guides, sorry!) Or just type "touhou music" into youtube and you'll find remixes in every genre imaginable.
