I suspect it's largely a reaction to the canon material itself, i.e. in ATLA/LOK fandom(s), the shows often address fairly dark themes (war, genocide, political conflicts where both sides have valid points, power dynamics, etc.)...but it's a kids show, which means a lot of the darker or more explicit details tend to get glossed over or handwaved away. Fandom compensates for that via slightly darker fanworks. On the flip side, Hannibal is already exceedingly dark, and psychologically complex - it's a show that makes people a little uncomfortable is supposed to make them feel a little uncomfortable. And as everyone (except perhaps certain SJWs) can tell you, one of the best ways to cope with anything from discomfort to horror and trauma is to joke about it, so fandom gets cracky.
