Even if I adore a fanfic, if the author doesn't update that story for months then I'm probably going to forget some of the details or have moved onto another fandom by then. (Which isn't to say that I wouldn't still be interested in the events of that series, but I might not feel like rereading the whole fic so that can fully grasp the new chapter. Sometimes there's no time for rereading multiple chapters anyway; especially if the fic is quite long, like 15+ chapters.)
Updating as you can is the best thing you can do, I think. If you can't write fast enough to update every few weeks that's alright (And perfectly understandable), but if you can I think it makes the reader experience better and makes it more likely that people will read your work. (Like you said, I've had authors I loved but who didn't update often at all, or were bad at completing stories, and in those cases I usually lose the drive to read their stuff.)
