History isn't even involved here, people want to ship everything that moves nearly. Many forget the possibility of close friendship between same sex, and that if you spill your secrets and hold hands with them doesn't make you gay. Also people forget about the meaningful factors in surroundings or backstories of characters. But that's just how some minds work.

Or there's also the possibility that those slashers are completely aware that close platonic friendships exist, probably have a few themselves - but are simply more interested in fantasizing and writing about them being in love and banging. I love Holmes and Watson's awesome platonic friendship! That's what canon is for! But if I'm going to be having fun with my own imagination, theorizing and playing with the "what ifs" and looking for alternative interpretations (which are a huge part of the fun of fiction), then yeah, somebody's gonna get the D. A lot. Because that's what I like to read and write about most.

I always get a bit confused when people moan about fic writers adding interpretations that aren't in the source material - isn't that the point? As you say, there's already plenty of stories about friends, especially from that period of history. It's a *lot* harder to find period stories about queer folks.
