I'm curious as to what your stance would be on dating a (reasonable and not militant) vegetarian.

Da, but I would probably date them and never get serious. A big part of my relationship/dating activities have always involved food--cook offs, bbqs, dinner and a movie dates, taking turns cooking, lunch meet ups, recipe trading and trying, and whatever else--and I couldn't really see myself ending up with someone with such a huge restriction on what they can eat. It just wouldn't work out on the common interests front.
