I made biscuits from a recipe for the first time last week, due to my severe dietary restrictions, and they were "pretty good".

Tried to make another batch this afternoon with some tweaks, and HOLY CRAP THEY ARE AMAZING. I mean, I would eat these if someone else took the time to make them or if I could eat anything. The fact they only involve a few ingredients, all non-perishable and compliant with my diet, and take 5 minutes to throw together before baking? That makes them actually ATTAINABLE, in addition to delicious.

(Biggest difference, I think, was replacing half the sorghum flour with potato starch. Before I subbed the sorghum in for all-purpose by itself, and the biscuits were kinda dry and crumbly, although they tasted good. Now they have a sorta crisp crust and are all chewy inside and mmmmmm...)

Good for you! Baking is a science and it doesn't matter what the ingredients are (common flour or other varieties). But it's just so fascinating to take these dry and wet ingredients together and make something good and edible from them.
