It wasn't actually her choice, according to recent interviews with the actress who played Gretchen. Walt left her. They discuss it during the scene at the restaurant.

They were engaged and she took him home to meet her very wealthy family. Walt freaked out and couldn't take the sense of inferiority, then left her flat. So Gretchen ended up with Elliot instead and Walt picked up a waitress at his favourite restaurant.

It fits perfectly with Walt's characterisation and I love the irony that he made the choice to fuck his own life up so badly out of the same pride that ended up destroying him in the end.
