Shipping = you want them to get together and/or like the idea of them as a couple.

This = you either don't want them to get together or don't really care about them as a couple, but you find their interaction hot or you like reading smutty fic for them because they're hot.

For example, you can not ship Harry/Snape at all and find the whole idea of them getting together squicky, but still like to read Harry/Snape smut because the fic or their dynamic hits a kink of yours.

I guess I define it differently then? If I enjoy reading about a couple for whatever reason, I ship them. I never much cared whether they got together in canon or not.

I don't think it's necessarily about becoming canon. More like, if you like the idea of them BEING a couple, even in headcanon, it's shipping, whereas if you really don't give a fuck about them as a couple, or actively don't like the idea of them being a couple and/or think it's OOC, but you think the fic for them is hot, it doesn't really count as "shipping."
