It's okay, OP, fanfic has got you covered on this. Like, 50 years of fanfic to be exact. Because even if they had shown Spock falling in love in the reboot movies, I'm sure it wouldn't have been long enough or done in the right way to make you happy, but fanfic has it happen in every way imaginable so I'm sure they'll be something to please you there...
