I'd start setting some boundaries about your private life now. Go on dates. Don't tell your parents much about them. Say it's because you don't want to 'jinx' it by talking about your date too much now if you feel you have to give a reason, but stick to your guns.

Also, do start going out all night, or at least quite late. Say you're hanging with friends colleagues and you got carried away/ decided to go to a karaoke bar/ crashed on someone's couch after a big night. Or if you don't want to do that, just be more social in general. Go to meet up groups. Join a society. Starting seeing the friends you do have more often and tell them you want to meet more people so they might hep you with this.

Tell your parents you're trying to meet more people and widen your social circle if they ask about what you're doing. Don't evade questions, but don't give them more information that necessary - e.g. "I went to the bar with X/ X group. We chatted and had a few drinks. It was fun," should be all you need to say.

Eventually, if you stick to your guns, your parents will start respecting your privacy/ not be overly inquisitive when you stay out all night.
