Not to play devil's advocate but Mass Effect had a male option because that's what Bioware DO, that's what a lot of games do. It's create-a-character. That's like asking why Fallout lets you create a male character, or why Dark Souls lets you create a male character.

The problem is that Dudeshep was on all the marketing. I always hated that, but it's not really Bioware's fault, but EA's.

Not to mention that a majority of people PLAY as man-shep(82% according to the wiki). The fandom may have a hard-on for femshep but most casuals play dudes. The last game at least had male/female commercials and a reversible cover. Remember that secret ages ago where OP said that fucked around and changed all of them to be the woman.
