That, and probably partly confirmation bias. Comedians who everyone hates and nobody wants to watch don't have very long careers on TV or anywhere else. It is entirely possible to ask dozens or hundreds of people if they enjoy Big Macs and to hear a negative response every time, but look at all the McDonalds chains everywhere. Someone (many someones!) like them enough to eat them. Likewise, you might not talk to many Andy Parsons fans but if there were enough of them around where it hurt Mock the Week's ratings, he'd be history.
