It's not just Uhura's limited role. Uhura might not always have had much to do in TOS, but Nichelle Nichols brought so much charisma and magic to the character. People aren't just her fans because she was a black woman. It was that and the fact that she was amazing.

Nichelle took every line she had and made it work beyond what it should have. And although she had few really meaty moments, the ones she did were very memorable -- Mirror, Mirror anyone?

Saldana's Uhura suffers because she's just so generic and could basically be exchanged for any "strong" girlfriend under the sun.
