The phrasing here about being gay "restricting" this character to certain roles and preferences makes me uncomfortable, and it seems to further a mistaken belief that bisexual people are by default more open-minded than gay or straight people.

The fact of the matter is that they can be. You will not believe how many times I hear the same bs argument about people who like male and female genders or don't prefer a gender to be wrong or greedy from gay people in addition to straight people. I find that people who are more open-minded due to their sexuality can be more more open-minded to restricting 'rules' of being gay or straight or gendered.
