In my experience, you can encourage them to try them anyway. I have had great success with changing people's dietary habits from what I'd term destructively limited to being able to eat and enjoy a wider range of foods simply through offering a choice of preparations and not being personally offended if they didn't like it.

You can really accomplish a lot if you work with people to find solutions that suit their tastes. Adding spinach to fruit smoothies, for example, is something I often suggest to people who claim they can't stand the taste of anything green.

Hey, it's possible. There's stuff I'll never touch - but then there's stuff I did indeed learn to appreciate because someone prepoared it differently than my mom or grandma used to.

I can't believe I ever disliked broccoli, I don't know what my mom did to the poor vegetable, but it was horrible.
