While I haven't watched the past couple seasons, when I did watch Sheldon didn't come across as someone interested in sex. Ever.

His reasoning for dating Amy seemed to be because she was like him and not because he wanted a physical relationship with her.

Have things changed that much?

Not really. However, they've gradually developed more physical intimacy over their relationship (hand-holding, occasionally hugging, and like 2-3 kisses so it's a big deal when they do) and Sheldon said something to the effect of that he'd never thought about it much before, but he might consider sex with Amy at some distant point in the future. I think there was a secret about that scene about a year back or so.

This, to me, doesn't necessarily preclude him still being asexual (engaging in sex to fulfill a partner's needs is ok for some people, although I think it would be kinda OOC for Sheldon specifically) but it would make him less of a "TV Asexual Poster Boy."
