But ... why not just go for a different story altogether? One that better suits you? If so little would be left of this one with those parts removed, why change it at all, instead of seeking a different one?

Because there's clearly something people want to pass along with this story. There's an idea there, a message, even if it's one I don't get. If there's a way to put that idea in a context that still works, I think it's worthwhile for folks who value it to keep trying. (It's a bit like how writers keep trying to take the racism out of Lovecraft--racism was one of the factors that resulted in the kinds of stories he wrote, but that doesn't mean those stories can't inspire black authors in their own writing.)

I think what people want to pass on is the history and/or mythology of a people. There are other themes, freedom and its prices, faith and its reward, the morality of vengeance, any number of things, but all of those can easily be told in a different story. They are immortal, those themes, and can be told a thousand times. What makes this story specific is the people and the context it belongs to, their history and their beliefs, and you cannot remove the terrible things from that. They're the point. 'This is what we suffered, this was the vengeance for it'. A modern audience can judge this story by their own values, but it's told by its own, because it comes with a history attached.

If you want these themes framed by modern morals, I think read a modern story. Prettying up old history and old beliefs only does them a disservice in the end, I think. Better to let them stand, and write new stories out from them, to show how we've learned or forgotten or changed since then. Changing the old story to match the new beliefs only hides the differences, and makes a false sameness to hide horror in.
