You're right about it being pricey--even cuts like shank. And I hardly ever see shanks in the market anymore. Neck, which used to be available and so cheap that my dad made stew with it back when he was a penniless grad student, you can't find at all. But I've noticed that quite a few Americans think lamb is gross and nasty.

Lamb is cheap and plentiful over here, but nobody sells mutton. I really don't like lamb, but proper aged mutton is a delight on the tongue. You just can't get it though. There have been a couple of cases of people passing lamb off as mutton, and it just does not taste the same. Saltmarsh grazed mutton is the best, but that *is* pricey when you find it. Hill mutton is probably the next best though.

Lamb prices make me so sad. I had it so often as a child and love it, but now it's so expensive we only have it maybe half a dozen times a year. My dad would always joke we were eating elf because "leg of lamb" sounds like "Legolas."

And YES to the lack of shanks! We couldn't even find one for Passover! Of course I could get into the annoying decline in the amount of selection in Passover specialty foods around here (even though there's a significant Jewish population in the SFV), but that's a topic for another time.

Yeah, before I ever tried it myself I had all sorts of people telling me that lamb is greasy and unpleasant. I don't get that at all.
