But does she not want to do it because she doesn't think the characters would make a good couple, or does she not want to because she doesn't like the idea of them not being straight? I got the impression it was the latter, and that's not exactly refreshing.

It doesn't matter what her reasons are for not wanting to do it. For her this is a job, one that involves her body and people that she knows seeing her do X, Y, and Z. For her, it's not an opportunity to take a moral or social stance or push her head canon.

The actress was asked to do something that she didn't want to do, she didn't want to, and she said no. Then she made her refusal stick. That's refreshing.

What's less refreshing is the implication that her personal boundaries, none of which were apparently pushed by the original contract that presumably didn't call for lady-on-lady kissing, are less important than the desires of third party spectators.

It's her body, and it's her choice what to do with it.

...except apparently when people want to see her kiss a girl.
