Simon R. Green's Blue Moon Rising. The hero rides a unicorn, goes to slay a dragon and rescue a princess, and winds up rescuing the dragon from the princess. He takes them all back to his kingdom, where he's the second son that was supposed to die on his quest. Then the story really gets started.

Also by Simon R. Green is the Hawk & Fisher series, which I love, and the Nightside series, which is more really fucked-up urban fantasy with some sci-fi thrown in.

I'd also recommend anything by Robin Hobb.
