Where are you currently finding your betas, OP? It sounds as though there's a big disconnect between what you're actively asking for, and the kind of betas you're attracting if those are their responses to those questions. They sound more like the comments of a reader than a beta.

Are they fellow writers within your fandom, found via find-a-beta posts in comms (a quick Google found me http://beta-search.livejournal.com/ which actually mentions the level of 'harshness' an author's okay with, so that might be something to look at?), something else?

Is there someone whose work you find really well done that you could either ask for beta-finding advice, or even if they'd be willing to take a look at your work?

Do you have a reader or two whose comments on your work are well-reasoned and helpful? You might consider approaching them, also.

Sometimes fic exchanges/challenges will also have open posts for beta readers.

Simply judging from the responses in this thread, I'm sure there are people out there who can offer the kind of crit you're looking for, but it might take a little lateral thinking to ferret them out. Good luck!
