I would sort-of agree with the sentiment that some of these characters started out as stereotype-ish (as with tons and tooons of male characters as well) but what I think you're missing and completely disregarding here is that most of these characters (like CC, Asuka, Yoko, Winry, and so on) do go beyond these stereotypes you accuse them of as the show progressed. I am not going to go in-depth with how these characters break-free from their mounds but the vital thing here is that they do get some form of development and that these characters do get fleshed out.

I think you’re just stuck on the notion that “AH, THEY STARTED OUT AS STRONG, BITCHY, AND VIOLENT SO THAT MUST BE ALL THERE IS TO THEM” that your views on characters in general get clouded or something. Because, dude, Yoko, for one, is faaaaar from being a tsundere and I am seriously baffled by the merest mention. As a previous commenter said, stop it with the polarizing. It’s getting old.

Also, citing Haruhi as an example does not really help your case since that show godsmacks you with the stereotypes intentionally (I mean, Mikuru, Itsuki, and Yuki, anyone?).
