Yeah, I don't see that too often either. The only ones I can think of off the top of my head are Vince Chung from American Dad and maaaaaybe Riley from Degrassi (he was pretty big into athletics but he wasn't especially "bro" like so maybe he gets partial credit)

You would not believe how many guys I know IRL who are that stereotype. Granted I actually live in Asia, but there are a lot of gym rats who are super serious about nutrition and diet to the point where it's sort of hilarious.

But yeah, I think Vince Chung was actually sort of interesting as a character. That he's Asian also doesn't really seem to be a defining or central character trait which was also sort of rare and neat.
