I'm not quite sure about any of OP's shows being really fantasy. I know I'll get flack for this, but I don't think GoT really has enough... magic in it to be a heavy fantasy genre. I know it has a bit, and a very select few supernatural creatures like dragons and zombies or whatever, but the bulk of it is political, alternate world human drama.

And Outlander, of course the going back in time thing has magical elements, but as of the first season (haven't read the books) nothing else has been fantasy about it. It's more historical fiction than fantasy at this point, except in that it is a sexual fantasy (and hey, I'm not complaining).

The genre descriptor you're looking for is 'low fantasy'.

Re: asoiaf - that's true in terms of what we've seen so far, but as far as we can tell it looks like the metaplot of the series is more or less about magic coming back and the main big conflicts are magical and fantastic in nature. It's just grrm back loaded it all. Probably intentionally.
