He's a lot meaner in US shows, it's part of his persona. From what I've seen in his UK cooking shows and that one about hotels, is that what he values is people who step up, keep trying, do their best and are open to constructive criticism. It sounds like that's what you're doing OP, so I think he'd be really pleased with you. You don't have to be perfect. No one's born knowing everything. But it sounds like you strive and if you keep striving you will be excellent.
