The racial climate of the 60s no doubt influenced the writing but the racism is annoying nonetheless.
Uhura does present a counterpoint to Spock's alieness on her own merit and in context of her dynamic with Spock in the story. For one, she helps him to accept his human side and he's allowed to express feelings that the vulcans considered a shame and weakness in him. She accepts him as a vulcan but still calls him out as a human when he's wrong and does something dumb. She doesn't use his vulcan side as an excuse blaming his flaws on his alieness (e.g., she doesn't call him pointy or robot to make a point about his behavior coming across as cold)
It's silly to pretent that she has to act like Mccoy to show Spock the merits of being half human.
