I didn't know there was much Riddler fic (the only male Batman villains that I've seen frequently put in pairings are the Joker and Bane, although I didn't look too terribly hard). Is the popular Riddler pairing Batman/Riddler or something else?

Riddler is pretty often shipped with Scarecrow, sometimes Two-Face, and yeah there is a decent amount of Riddler/Batman too
